Since we are all so busy
these days, I wanted to share
another meal that can be made
quickly and easily. After you
prep the ingredients, all you need to do
is throw them into a stockpot and
set the timer. Its a great recipe for
people trying to loose weight and those
on exercise routines as it's full
of healthy protein and is virtually fat
free.
This recipe and more can
be found in one of my favorite acid
reflux diet books: "Eating For Acid Reflux" by
Jill Sklar and Annabel
Cohen.
Lentil
Soup
2
Tbsp of olive
oil
1
cup of diced
carrots
1/2
cup of diced
celery
8
cups of vegetable
broth
2
cups of dry lentils (green or red),
rinsed
1/2
tspn of ground
cumin
1/2 cup of freshly
chopped parsley
To make this even
healthier, I recommend either mixing 6
cups of veggie broth with 2 cups of water
. You could use a lot more water but the
taste begins to
suffer.
Step
1
Prep all of the
vegetables and throw them into a large
pot over a medium-high heat and get to a
boil.
Step
2
Turn down the heat and
let the soup simmer for about 45 minutes.
The lentiils should be softened and the
soup thicker than in the
beginning.
