Lentil Soup


lentil soup Since we are all so busy these days, I wanted to share another meal that can be made quickly and easily. After you prep the ingredients, all you need to do is throw them into a stockpot and set the timer. Its a great recipe for people trying to loose weight and those on exercise routines as it's full of healthy protein and is virtually fat free.

Lentil Soup

 

 

2 Tbsp of olive oil 

1 cup of diced carrots 

1/2 cup of diced celery 

8 cups of vegetable broth 

2 cups of dry lentils (green or red), rinsed 

1/2 tspn of ground cumin 

1/2 cup of freshly chopped parsley

 

 

 

To make this even healthier, I recommend either mixing 6 cups of veggie broth with 2 cups of water . You could use a lot more water but the taste begins to suffer.

 

 

Step 1

 

 

Prep all of the vegetables and throw them into a large pot over a medium-high heat and get to a boil.

 

Step 2

 

 

Turn down the heat and let the soup simmer for about 45 minutes. The lentiils should be softened and the soup thicker than in the beginning.
